Another comment here: You say you live in central Texas and people "are not eating okra" - despite this being completely untrue(nearly laughable) you seem to be dead set on the idea that people are exactly like yourself, eating mexican food and eschewing anything Southern and traditionally Texan. My girlfriend and her family all live in Austin. They love okra, deep-fry turkeys and visit the famous Catfish Parlor on 183 routinely because they love catfish, hush puppies etc. Apparently many other people in Austin do to because the place is a staple. In fact, myself and one of her uncles had a long and interesting conversation about the emphasis placed on sports in the South, and how Texas was a shining example of sports-first mentality in the South. Now, I have never had tamales and tortillas with her Austin family. I have,however, had fried pickles as Katz's deli, a whole mess of Southern stuff at Threadgills(much more famous than any mex-food joint you can name off the top of your head) and sweet tea at short-stop burger. Now, I know that these are things that you consider very un-texan and simply nonexistant in Austin, or this magical bastion of un-southern and hispanic culture that you percieve to be Austin Texas and central Texas in general, but they are facts - not huge amounts of evidence, but one guy's experience. Just like yours is one guy's experience, so don't try and tell me what I and Texas are or are not when your single experience is no more important than mine.

By the way, while passing through Hondo we stopped at a chinese buffet and they gave us sweet-tea that would crack your teeth. We also stopped outside of Garner state park at a place called the Honey B and had chicken fried steak, catfish with hotsauce and fried okra... how do these things make sense, even in South Texas? It seems that these things would be incredibly uncommon and hard to find, since "in central texas, you look around and people are not eating okra..."
