Of course you should teach other things besides music! Music isn't the be-all, end-all of life, is it? I mean, yeah, we're music majors, and it can seem that way sometimes. But there IS more to life than music, and as teachers in public schools we will be responsible for teaching that to students. Now, I'm not talking about teaching them how to do math or anything. I'm talking about teaching them the importance of teamwork, attention to detail, responsibility, goal setting, appreciation for the arts, and any number of things not taught in any textbook. Yes, music is important, but those other things are just as important. :)

Besides, if you try to teach just music to people who are in your ensemble only because it's a gen ed requirement, you won't reach them. However, if you try to teach music to them through other values that would mean more to them, you may reach more of them that way.
