    Good Afternoon All CS`s
    Hope you will injoy the recipes to day,See ya all in the new day.

    Easy Shrimp and Crab Casserole
    1 lb. shrimp steamed and peeled
    1/2 lb. crabmeat
    2 jars chopped pimentos
    1/2 cup chopped celery
    1/4 cup chopped green pepper
    2 Tblsp. chopped onion
    2 Tblsp. Worcestershire sauce
    1/2 tsp. salt
    1/4 tsp. pepper
    1 small can mushrooms
    1/2 cup mayonnaise
    3/4 cup half and half
    Mix all together and heat in 375 degree oven until hot and.
    ********************
    CRAB & CHEDDAR PASTA
    2 Onions, chopped
    2 Celery ribs, chopped fine
    ˝ Red Bell pepper, chopped fine
    6 oz.Crab meat
    1 c.Chicken Stock
    2-3 T.Flour
    1 c.Milk
    6 oz.Asparagus cut into small pieces
    8 oz.Cheddar
    6 oz.Pasta - Angel Hair (cooked al dente)
    Saute onions, celery, red pepper; add flour & sauté; add stock &
    milk & cook till thickened; add cheese & toss w/ cooked pasta.
    ************************
    Homemade Yeast Biscuits
    1 package yeast
    1/2 cup luke warm water
    5 cups all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 tablespoon baking powder
    2 tablespoons sugar
    3/4 cup solid shortening (recommended: Crisco) (I use half
    crisco and half butter)
    2 cups buttermilk
    Directions:
    Preheat oven to 400 degrees F.
    Dissolve yeast in lukewarm water, set aside. Mix dry
    ingredients together. Cut in shortening.
    Add yeast and buttermilk and mix well. Turn dough onto lightly
    floured surface and rull out to desired thickness. Cut with
    small biscuit cutter and place on greased baking sheet.
    (Optional: Brush biscuits with melted butter) Bake for 12
    minutes or until golden brown.

    EASY ITALIAN FISH SOUP
    Yield: 4 servings
    INGREDIENTS
    1 large onion, chopped
    1 large rib celery, chopped
    1/2 teaspoon minced garlic
    1 tablespoon olive oil
    1 can (14-1/2 ounces) reduced-sodium diced tomatoes, undrained
    1 bottle (8 ounces) clam juice
    1/4 cup dry white wine or clam juice
    1/4 cup plus 2 tablespoons chopped parsley, divided
    1/4 teaspoon dried marjoram leaves
    1 pound halibut steaks or other lean, firm fish, cut into 1-inch pieces Salt and pepper, to taste
    DIRECTIONS
    Saute onion, celery, and garlic in oil in large saucepan
    over medium heat until tender and lightly browned, about
    5 minutes. Stir in tomatoes and liquid, clam juice, wine,
    1/4 cup parsley, and marjoram. Heat to boiling; reduce
    heat and simmer, uncovered, 20 minutes.
    Add halibut; simmer 3 to 5 minutes longer, until fish is
    tender and flakes with a fork. Season to taste with salt
    and pepper. Sprinkle with remaining 2 tablespoons parsley.
    Nutritional Information Per Serving (1/4 of recipe):
    Calories: 206, Fat: 6.3 g, Sodium: 242 mg,
    Protein: 25.4 g, Carbohydrate: 9.7 g
    Diabetic Exchanges: 2 Vegetable, 3 Meat.

    CHICKEN CHOWDER HISPANIOLA
    Yield: 4 servings
    INGREDIENTS
    12 ounces boneless, skinless chicken breast, cut into 3/4-inch cubes
    1 teaspoon olive oil
    1 onion, chopped
    1 can (15 ounces) garbanzo beans, rinsed, drained
    1 can (14-1/2 ounces) reduced-sodium fat-free chicken broth
    1 can (15 ounces) reduced-sodium diced tomatoes, undrained
    2 cups packed fresh spinach leaves
    2 tablespoons sofrito sauce, optional
    1/4 cup slivered almonds, toasted
    DIRECTIONS
    Saute chicken in oil in large saucepan until lightly
    browned. Add onion; saute until tender.
    Add beans, broth, and tomatoes and liquid.
    Heat to boiling; reduce heat and simmer, covered,
    10 minutes. Stir in spinach and sofrito, and simmer
    10 minutes longer; season to taste with salt and pepper.
    Spoon chowder into bowls; sprinkle with almonds.
    Nutritional Information Per Serving (1/4 of recipe):
    Calories: 346, Fat: 10.5 g, Cholesterol: 54.3 mg,
    Sodium: 639 mg, Protein: 30.5 g, Carbohydrate: 28.2 g
    Diabetic Exchanges: 3 Vegetable, 1 Bread, 3 Meat, 1 Fat.

    ONION AND BLUE CHEESE FOCACCIA
    Yield: 8 servings
    INGREDIENTS
    Olive oil cooking spray
    2 cups thinly sliced onions
    4 cloves garlic, minced
    1/2 teaspoon dried rosemary leaves
    Salt and pepper, to taste
    1 focaccia (Italian flat bread, 10 ounces)
    1/4 cup chopped sun-dried tomatoes (not in oil)
    2-3 ounces crumbled blue cheese
    2 tablespoons grated fat-free Parmesan cheese
    DIRECTIONS
    Spray large skillet with cooking spray; heat over medium
    heat until hot. Cook onions and garlic, covered, over
    medium heat until wilted, about 5 minutes. Cook, uncovered,
    over low heat until tender and lightly browned, about
    15 minutes. Stir in rosemary and season with salt and pepper.
    Arrange onions on focaccia; sprinkle with sun-dried tomatoes
    and cheeses. Bake at 350 degrees until focaccia is hot and
    cheese melted, about 15 minutes. Cut into wedges.
    Nutritional Information Per Serving (1/8 of recipe):
    Calories: 146, Fat: 3.5 g, Cholesterol: 5.2 mg,
    Sodium: 354 mg, Protein: 5.9 g, Carbohydrate: 23.3 g
    Diabetic Exchanges: 2 Vegetable, 1 Bread, 1/2 Fat.

    DIABETIC RECIPE`s
    MONKFISH KABOBS WITH LEMON AND THYME
    Yield: 4 servings
    1 pound, 7 ounces monkfish fillet
    1 tablespoon olive oil
    2 cloves garlic, crushed
    Zest and juice of 1 lemon
    2 tablespoons freshly chopped thyme
    2 tablespoons freshly chopped cilantro
    Salt and pepper, to taste
    2 limes, quartered
    Preheat the broiler to medium, and line
    the broiler pan with aluminum foil.
    Cut the fish fillets into chunks and place them
    in a bowl. Stir in the olive oil, garlic, lemon
    zest, and juice, thyme, cilantro and seasoning.
    Thread the fish pieces onto 4 skewers.
    Secure the ends with lime wedges.
    Grill, turning occasionally, for about 5-8 minutes.
    It is important to make sure that the fish does not overcook.

    MUSSELS WITH TOMATOES, BASIL AND GARLIC
    Yield: 4 Servings
    2 pounds mussels
    1-1/2 teaspoons vegetable oil
    1/2 cup finely diced onions
    2 teaspoons crushed garlic
    1 can (14 oz.) tomatoes, drained and chopped
    1/3 cup dry white wine
    1 tablespoon chopped fresh basil (or 1/2 teaspoon dried)
    1-1/2 teaspoon chopped fresh oregano (or 1/4 teaspoon dried)
    Scrub mussels under cold water; pull off hairy beards.
    Discard any that do not close when tapped. Set aside.
    In large non-stick saucepan, heat oil; saute onions and
    garlic for 2 minutes. Add tomatoes, wine, basil and oregano;
    cook for 3 minutes, stirring constantly.
    Add mussels; cover and cook until mussels fully open,
    4 to 5 minutes. Discard any that do not open. Arrange
    mussels in bowls; pour sauce over top.
    ***************************
    VEGETABLE BEEF BARLEY SOUP
    Yield: 4 Servings
    1 tablespoon vegetable oil
    2 teaspoons crushed garlic
    1 medium onion, diced
    2 celery stalks, diced
    2 carrots, diced
    2 cups sliced mushrooms
    3-1/2 cups beef stock
    1/3 cup barley
    2 small potatoes, peeled and diced
    4 oz. stewing beef, diced
    2 tablespoons chopped fresh parsley
    In large non-stick saucepan, heat oil; saute garlic,
    onion, celery, carrots and mushrooms until tender,
    approximately 10 minutes.
    Add stock, barley, potatoes and beef; cover, reduce
    heat and simmer approximately 50 minutes or until
    barley and potatoes are tender, stirring occasionally.

    CREAMY SUN-DRIED TOMATO DIP
    Yield: 8 Servings
    4 oz. dry-packed sun-dried tomatoes
    3/4 cup 5% ricotta cheese
    1/2 cup chopped fresh parsley
    1/3 cup vegetable stock or water
    3 tablespoons chopped black olives
    2 tablespoons olive oil
    2 tablespoons toasted pine nuts
    2 tablespoons grated Parmesan cheese
    1 teaspoon minced garlic
    In a small bowl, pour boiling water to cover over
    sun-dried tomatoes. Let stand 15 minutes. Drain and chop.
    In a food processor combine sun-dried tomatoes, ricotta,
    parsley, stock, olives, olive oil, pine nuts, Parmesan
    cheese and garlic; process until well combined but
    still chunky. Makes: 1-3/4 cup.
    *******************************
    GARLIC TIGER SHRIMP
    Yield: 4 servings
    1 tablespoon olive oil
    2 cloves garlic, peeled and thinly sliced
    1/2 pound large raw shrimp (such as tiger shrimp), peeled
    Freshly chopped parsley and 1 lemon,
    cut into 4 wedges, to garnish
    Preheat the oven to 400 degrees F.
    Put the olive oil and garlic in a large, shallow ovenproof
    dish and heat in the oven for 2-3 minutes. You need to
    watch carefully so that the garlic does not start to brown.
    Add the shrimp, and turn them in the hot oil until they are
    completely coated. Return them to the oven and bake for a
    further 3 minutes until they are pink and cooked through.
    Serve immediately, sprinkled with freshly chopped parsley.
    Serve accompanied by lemon wedges for squeezing.

    TABBOULEH (CRACKED WHEAT SALAD)
    Yield: 3 cups (6 servings)
    1/2 cup finely cut bulgur
    1 cup finely chopped fresh parsley
    1/2 cup chopped onion
    1 fresh tomato, cored, seeded, and chopped
    3 tablespoons fresh lemon juice
    3 tablespoons canola or corn oil
    1/4 teaspoon freshly ground pepper
    Soak the bulgur in 1 cup water for 1/2 hour. Drain well.
    Place the bulgur in a large bowl
    and add the vegetables; mix well.
    Combine the lemon juice, oil, salt, and pepper.
    Add to the salad; toss lightly to coat the ingredients.
    Refrigerate for at least 8 hours before serving.
    ********************************
    CAESAR SALAD
    Yield: 4 servings
    4 thick slices French, or Italian, bread
    1 clove garlic, cut in half
    6 cups torn romaine lettuce
    2 tablespoons lemon juice
    2 tablespoons no-cholesterol real egg product
    1 tablespoon olive oil
    1/2 teaspoon Worcestershire sauce
    2-3 anchovies, well drained, chopped, optional
    2 tablespoons grated fat-free Parmesan cheese
    Dash hot pepper sauce
    Freshly ground pepper, to taste
    Rub both sides of bread slices with cut side of garlic; mince
    remaining garlic and reserve. Cut bread into 1/2 to 3/4-inch
    cubes. Bake on jelly roll pan at 425 degrees until croutons
    are toasted, about 5 minutes.
    Place lettuce in salad bowl. Beat together lemon juice,
    reserved garlic, and remaining ingredients, except croutons
    and pepper. Pour dressing over lettuce and toss; season
    to taste with pepper. Add croutons and toss again.

    SWEET POTATO PONE
    Yield: 4 servings
    1 small onion, finely chopped
    1 tablespoon margarine
    3 tablespoons flour
    1 cup fat-free milk
    1/2 cup no-cholesterol real egg product or 2 eggs
    1 large sweet potato (about 8 ounces), unpeeled,
    cut into 1-inch cubes, cooked
    2 tablespoons packed light brown sugar
    1/4 teaspoon ground cinnamon
    1/8 teaspoon ground nutmeg
    1/8 teaspoon ground cloves
    1/4 teaspoon salt
    2-3 dashes white pepper
    4 egg whites, beaten to stiff peaks
    Saute onion in margarine in medium saucepan until tender,
    3 to 5 minutes. Stir in flour; cook 2 to 3 minutes. Stir
    in milk; heat to boiling, stirring constantly, until thickened.
    Beat egg product in small bowl until thick and lemon colored,
    2 to 3 minutes. Slowly whisk about half the milk mixture into
    egg; then whisk egg mixture into saucepan. Cook over low heat,
    whisking constantly, 1 minute; remove from heat.
    Coarsely mash sweet potato with fork. Mix sweet potato, brown
    sugar, spices, salt, and pepper into milk and egg mixture. Mix
    in half the egg whites; fold mixture into remaining egg whites.
    Spoon mixture into lightly greased 1-quart souffle dish or
    casserole. Bake at 375 degrees F. until puffed and golden
    (sharp knife inserted halfway between center and edges will
    come out almost clean), 30 to 35 minutes.

    I hope all of you had a wonderful blessed Easter. I have had a wonderful time the last few days, visiting with my oldest DD, and her son Derek. I got to see all of my children, except Margie, and her two boys, but I see them all the time, since I babysit Tristan and Zachary.

    Karla set me up a "My space" account, so if any of you have one, and want to add me as a friend, let me know. I'm still learning my way around it. I don't know how to post the pictures or siggies yet.

    Happy Easter, Cooking Seniors.
    Just wanted to show you what a hard time Easter bunny is going to have getting through our white stuff. This picture was taken 2 weeks ago but most of the snow is still with us, and we're expecting some more next week. I was sitting in my car looking at the snow by the side of my house. The entrance to the house has 3 steps up, so this gives you an idea how high the snow is.

    Hello to Joyce And all you other ladies. We just got back from a lovely stay at our cabin. Weather was beautiful. Well Man came and finished up installing new water pump so we are back in business. Almost hated to come home. We'll be going back on the 21st as DGD is having DGGS's 2nd birthday party there. The kids always have so much fun there especially when there is water in the creek. We always tell the moms to bring extra clothes cuz you know what happens when you mix kids and a creek.
    WE are going to #1DD's for dinner on Sunday after church. I just have to make a cake.

    Today has been very busy, we went grocery shopping and bought all the things we needed for our Easter Dinner. Hope everyone is planning a nice Dinner with love ones.

There are 37 photos in all, that she posted in an album. Some of them are fountains, statues, and parks, but most of them are these beautiful buildings.
