    CLAM AND PASTA CHOWDER
    Yield: 6 servings
    INGREDIENTS
    2 teaspoons vegetable oil
    1-1/2 teaspoons crushed garlic
    1 cup chopped onions
    1/2 cup finely chopped carrots
    2/3 cup chopped sweet green peppers
    1-1/2 cans (5 ounces) clams, reserving juice from 1 can
    1 cup diced potatoes
    2-1/2 cups canned or fresh tomatoes, crushed
    2-1/2 cups seafood or chicken stock
    1/3 cup tubetti or macaroni
    DIRECTIONS
    In a large nonstick saucepan, heat oil; saute garlic, onions,
    carrots, and green peppers until tender, approximately 5 minutes.
    Add juice of 1 can of clams, potatoes, tomatoes
    and stock. Cover and simmer for 20 minutes.
    Add reserved clams and tubetti.
    Simmer for 10 minutes or until pasta is cooked.

    SHRIMP AND SNOW PEA TIDBITS
    Yield: 4 to 6 servings
    INGREDIENTS
    16 snow peas
    2 teaspoons vegetable oil
    1 teaspoon crushed garlic
    1 tablespoon chopped fresh parsley
    16 medium shrimp, peeled, deveined, tail left on
    DIRECTIONS
    Steam or microwave snow peas until barely tendercrisp.
    Rinse with cold water. Drain and set aside.
    In nonstick skillet, heat oil; saute garlic, parsley and
    shrimp just until shrimp turn pink, 3 to 5 minutes.
    Wrap each snow pea around shrimp; fasten with toothpick.
    Serve warm or cold.

    Cranberry Bread
    1 cup fresh cranberries, coarsely chopped (frozen cranberries
    can be used)
    1 1/3 cups sugar
    1 large orange
    2 tablespoons butter, melted
    About 1/2 cup boiling water
    1 large egg, lightly beaten
    2 cups all-purpose flour
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 cup chopped pecans
    Preheat oven to 350 degrees. Grease and flour a 9×5×3-inch
    loafpan. Set prepared pan aside.
    Combine chopped cranberries and sugar in a medium bowl. Grate rind from orange using large eyes of a greater. Cut orange in half, and extract juice. Combine grated rind, juice and melted butter in a 1-cup liquid measuring cup; add enough boiling water to orange jice mixture to equal 1 cup. Add orange juice mixtureto cranberry mixture; let cool slightly. Stir in egg.Combine flour and next 3 ingredients in a large bowl. Addcranberry mixture, stirring must until dry ingredients are moistened. Fold in pecans.
    Pour batter into prepared pan. Bake for 1 hour or until a wooden pick inserted in center of load comes out clean. Cool in pan ona wire rack 1- minutes. Turn out onto a wire rack and let cool completely.Loaves may be tightly wrapped in plastic wrap and frozen up to one month.Yield: 1 loaf.

    Bacon and Onion Bread recipe
    5 or 6 strips bacon
    1 small onion, chopped
    2 cups all-purpose flour
    1 tablespoon baking powder
    1 tablespoon sugar
    1/4 teaspoon salt
    1/8 teaspoon black pepper
    1/8 teaspoon cayenne
    2 large eggs
    1 cup sour cream
    1/4 cup butter, melted
    Heat oven to 350 degrees F. grease a 9-inch loaf pan.
    Cook bacon in skilled until crisp. Drain on towels, then dice coarsely. Remove all but 2 tablespoons of fat. Add onion and cook for 2 minutes or until tender.
    Mix flour, baking powder sugar, salt, pepper and cayenne in
    large bowl.Whisk eggs, sour cream and butter until blended; stir in bacon and onion. Pour liquid mix over dry ingredients and fold in just until combined. Do Not overmix.Spoon into prepared loaf pan and bake for 50 minutes or until it tests done. Cool in pan for 10 to 15 minutes, then remove to rack to cool completely.

    Bacon Cheeseburger Meatloaf recipe
    Meatloaf:
    1 1/2 pounds 85% lean ground beef
    1 cup oats (quick or old fashioned, uncooked)
    1/4 cup finely chopped onion
    1 egg, lightly beaten
    1 (8 ounce) can tomato sauce
    1/2 teaspoon black pepper
    Secret Sauce:
    1/3 cup mayonnaise
    2 tablespoons catsup
    Toppings:
    8 large (about 4 x 6-inch each) slices cheddar cheese
    8 strips thick-sliced bacon, crisp-cooked and halved
    2 medium tomatoes, sliced
    8 hamburger buns or other favorite roll or bread, split
    and toasted (optional)
    Heat oven to 350 degrees F. Spray 13 x 9-inch metal baking pan with cooking spray.
    For meatloaf, combine all meatloaf ingredients in large bowl;mix lightly but thoroughly. Press mixture evenly into pan.Bake 30 to 35 minutes or until meatloaf reaches medium doneness(160 degrees F) and center is no longer pink. Drain off any juices. Heat broiler.
    For Secret Sauce, combine ingredients in small bowl; mix well.
    Spread over hot meatloaf, completely covering; cut meatloaf into8 rectangles. (Do not remove from pan.) Top each rectangle with cheese, 2 half pieces bacon and tomato slices.Broil meatloaf 5 to 6 inches from heat source 2 to 3 minutes or until cheese melts. Serve, if desired, on bun or bread.Makes 8 servings.

    German Apple Pancake
    1/2 cup flour
    1/2 cup milk
    2 eggs
    1 large or 2 medium size apples
    2 tablespoons butter or margarine
    2 tablespoons granulated sugar
    1 teaspoon cinnamon
    Preheat oven to 400 degrees F.
    Mix sugar and cinnamon.
    Mix flour, milk and eggs together. Melt butter in cast iron
    skillet (this is essential). Remove from heat. Pour mixture
    into skillet. Peel and slice thinly the apples. Place on top of mixture. Sprinkle with cinnamon and sugar mixture. Bake 20minutes. Serve from cast iron skillet.

    Cajun Shrimp or Crawfish Pasta
    2 tbsps. butter
    2 tbsps. flour
    1 cup milk or more it too thick
    1/4 cup white wine or more to taste
    garlic to taste
    cajun seasoning to taste, I used at least 2 tsps.
    1/2 cup grated Parmesan cheese (or more)
    at least 1/2 lb. peeled cooked shrimp or crawfish tails

    If you start with raw shrimp or crawfish, saute it in butter
    with garlic and some Cajun seasoning on it before adding to
    sauce and reduce amount of seasoning in the sauce.
    Serve over angel hair pasta.

    CRAWFISH SMOTHERED GRITS
    1 pound peeled crawfish tails
    Salt
    Cayenne
    2 tablespoons olive oil
    1 cup chopped onions
    1 tablespoon chopped garlic
    2 cups beef stock
    3 cups half and half
    1 1/2 cups quick-cooking white grits
    1/2 cup freshly grated Parmigiano-Reggiano cheese
    In a mixing bowl, toss the crawfish tails with salt and cayenne.In a 3-quart saucepan, over medium heat, add the olive oil. When the oil is hot, add the onions. Season the onions with salt and cayenne. Saute for 2 minutes, or until the onions are soft. Add the crawfish and garlic. Continue to cook for 2 minutes. Add the stock and half and half to the pan. Season with salt and cayenne. Bring the liquid to a boil. Reduce the heat to medium-low and simmer for 2 minutes. Add the grits and stir constantly until they are very tender, about 10 minutes. Add the cheese and stir to mix and melt it. Serve warm.Yield: 8 to 10 servings.

    BEST JUICY HAMBURGERS
    2 pounds ground chuck
    1 pound ground sirloin
    3 tablespoons steak sauce
    3 extra-large eggs
    1 1/2 teaspoons kosher salt
    3/4 teaspoon freshly ground black pepper
    4 tablespoons cold unsalted butter
    12 hamburger buns
    Carefully mix the meats, steak sauce, egg yolks, salt, and
    pepper with the tines of a fork, but do not mash it. Lightly
    form each hamburger and lightly press into a patty shape.
    Make an indentation and put a thin slice of butter inside each hamburger, making sure the butter is entirely encased in the meat.Heat a grill, broiler, or saute pan and cook the hamburgers
    or 3 to 5 minutes on each side until almost done. Remove to a plate and cover with aluminum foil. Allow the hamburgers to rest for 5 minutes and serve immediately on buns.(I also added chopped onion to mine and I also used a large
    pat of butter!)

    Herb Butter Hamburgers
    1 pound unsalted butter, room temperature
    1 tablespoon chopped fresh thyme
    1 tablespoon chopped fresh sage
    2 tablespoons chopped flat-leaf parsley
    1 tablespoon chopped chives
    1 teaspoon chopped fresh rosemary
    2 pounds freshly ground beef, combination chuck and shoulder
    Coarse salt and freshly ground black pepper
    Vegetable oil, for grill
    4 semolina rolls, split
    Baby lettuce, for garnish
    Sliced plum tomatoes, for garnish
    1.In a medium bowl, make compound herb butter by combining
    softened butter, thyme, sage, parsley, chives, and rosemary
    (this can also be done in a food processor). Turn out onto
    parchment or plastic wrap, and roll into a log, 1 1/2 to 2
    inches in diameter. Chill until firm, or freeze for up to 1
    month.
    2.Heat grill or grill pan.
    3.Form four 8-ounce, 1-inch-thick burgers. Cut four
    1/8-inch-thick slices of compound butter from the log. Make an
    indentation in the center of each burger, and place half of a compound-butter slice inside. Reshape meat to cover butter,making sure it is not visible from either side; season both sides with salt and pepper.
    4.Oil grill with a small amount of vegetable oil to prevent sticking.
    5.Grill burgers for 5 to 7 minutes per side for medium
    doneness. Remove from grill, and place each burger on a roll.
    Serve garnished with lettuce and tomato.

    GARLIC BUTTER
    1 c. butter, softened
    6 cloves garlic, minced fine
    2 tbsp. finely minced parsley
    2 tbsp. onion, finely chopped
    1/2 tsp. pepper
    Mix together. Can be frozen for later use. I freeze in 1/2 cup portions. Garlic butter can be used when making garlic bread and is delicious on rice.

    BRUSSELS SPROUTS WITH PECANS AND SWEET POTATOES
    Yield: 4 servings
    INGREDIENTS
    1-1/2 cups cubed peeled sweet potatoes
    3/4 pound brussels sprouts, cut in half
    1 tablespoon margarine
    1/2 cup chopped onion
    1 teaspoon crushed garlic
    1/4 cup chicken stock
    4 teaspoons brown sugar or honey
    1/4 teaspoon cinnamon
    2 tablespoons pecan pieces, toasted
    DIRECTIONS
    In a saucepan of boiling water, cook sweet
    potatoes until just tender; drain and reserve.
    Repeat with brussels sprouts. Set aside.
    In nonstick skillet, melt margarine; saute onion
    and garlic just until tender. Add sweet potatoes,
    brussels sprouts, stock, sugar, cinnamon and pecans;
    cook for 3 minute or until vegetables are tender.

    White Chocolate Cranberry Squares
    2 1/2 cups all purpose flour 2/3 cup granulated sugar
    1 cup butter
    2 eggs, beaten
    1 can (300 ml) sweetened condensed milk
    1 cup white chocolate chips 1 cup dried cranberries 1 pkg (200 g) sweetened shredded coconut
    1/2 cup semi-sweet or premium dark chocolate chips, optional Combine in food processor or large bowl, flour and sugar. Pulse or cut in butter to form fine crumbs. Press firmly into 13 x 9inch baking pan.
    Bake in 350 oven about 12 minutes, until lightly browned. Mix together in large bowl, eggs and sweetened milk. Stir in whitechocolate chips, cranberries and coconut. Pour over crust, bake 18 to 22 minutes, until set in centre. Melt semi-sweet chocolate chips, drizzle over top.Makes about 48.

    Breakfast Pizza
    1 package of pizza dough. To make one pizza.
    1/2 lb. bacon cooked crisp
    1/2 lb. sausage crumbled and cooked
    3 green onion thinly diced
    1/2 green pepper thinly sliced and diced
    4 eggs. scrambled
    8 oz. shredded cheddar cheese
    Mix dough according to package.
    While dough is rising cook bacon and sausage. Slice vegetables.
    Cook scrambled eggs in the same skillet as the meat.
    Spread dough thinly on pizza pan. Cook for 5 minutes at
    450 degrees F
    Remove from oven and add meat, eggs, veggies, and cheese. Return to oven until cheese is melted.
    This recipe is a huge success! We have it every Sunday morning and it holds us over till dinner time.

    Beer-Battered Chicken Strips
    1 large egg
    3/4 cup beer
    1 cup all-purpose flour
    1 teaspoon baking soda
    1 teaspoon salt
    ground black pepper
    3 chicken breast halves; skinless, boneless
    1 1/4 cups vegetable oil
    Beat the egg lightly with a whisk. Beat in the beer, then the dry ingredients, whisking until smooth. Cover and let stand for 25 to 30 minutes before using. Cut chicken breasts in half
    lengthwise. Heat oil in 10-inch skillet over a medium-high heat until oil reaches desired temperature of 360 degrees (or use deep fryer). Using tongs to hold chicken strips, dip in batter;allow excess to drip off. Remove and carefully lower, one by one, into the hot oil. After about 1 minute, turn the strips.Continue to turn the strips occasionally until they are golden,cooking for a total of 4 to 6 minutes. Transfer to to a paper towel lined tray. Pat more towels on top to absorb excess oil.Serve immediately with barbecue sauce or sweet and sour sauce.
    Serves 3 to 4.

    So nice to see the beautiful quilt. What a work of art!
    With help from my #2 DD I made four of the fleece blankets for my DGS's children. Not the work that would be involved in making a pieced quilt but the little ones will enjoy them.

    SWEDISH MEATBALLS
    Yield: 12 servings
    INGREDIENTS
    1 egg
    1/2 cup low-fat (1%) milk
    2 slices white bread, lightly toasted and made into coarse crumbs
    1/2 small onion, minced
    2 tablespoons minced fresh parsley
    1/2 teaspoon salt (optional)
    1/4 teaspoon ground allspice
    1/4 teaspoon nutmeg
    1 pound ground skinless turkey breast
    1/2 pound lean ground pork
    3 tablespoons all-purpose flour
    2 teaspoons vegetable oil
    DIRECTIONS
    In a large bowl, whisk the egg with the milk and bread
    crumbs; let stand for 5 minutes. Add the onion, parsley,
    salt, allspice, and nutmeg; blend well. Add the meats and
    stir with a fork until well blended. Cover and chill for
    at least 30 minutes.
    Sprinkle the flour on a piece of waxed paper and place next
    to the meat bowl. Shape the meat into 48 meatballs, about
    1 tablespoon each. Dip each meatball lightly in the flour
    and place on a baking sheet. Set aside.
    In a large nonstick skillet, heat 1 teaspoon of the oil.
    Add half the meatballs and cook until browned all over,
    5 minutes. Cover and cook the meatballs until the meat
    is no longer pink, 20-25 minutes, turning occasionally.
    (Remaining meatballs should be refrigerated.) Transfer
    the cooked meatballs to a bowl, cover, and keep warm.
    Remove any small meat pieces from the skillet.
    Repeat step 3 with the remaining meatballs.

    Caramel Icing
    1/2 cup butter or margarine
    1 cup brown sugar
    1/4 cup milk
    1-3/4 - 2 c.confectioners' sugar, sifted
    Directions
    Melt butter and add brown sugar. Cook over low heat, stirring constantly, about 3 - 4 minutes. Add milk. Stir until mixture comes to a boil. Remove from heat. Slowly add confectioners'sugar, beating well after each addition until thick enough to spread.Enough for a large cake.

    Baby Porcupines
    1 pound ground round steak
    1 cup bread crumbs
    1 egg
    4 tablespoons chopped onions
    2 tablespoons chopped green peppers
    1 teaspoon salt
    1 teaspoon cayenne
    1/8 teaspoon pepper
    3/4 cup raw rice
    1 cup tomato soup or tomato puree
    2 cups water
    Mix all but last 3 ingredients. Shape into small balls and roll
    in the uncooked rice, Heat tomato soup and water in heavy pan
    with a tight fitting cover. {Dutch oven is the best} for this.
    Place balls in the tomato mixture cover and cook slowly
    45 minutes or until meat is tender and the rice is done.

    This cookie recipes comes from the 1941 Purity Cookbook.
    It was one of the first recipes my grandmother taught me
    to bake.
    Baking cookies was a favorite pastime with my grandmother.
    I bake cookies a lot just for the memories of her.
    Ragged Robins
    2 egg whites
    1/4 tsp. vanilla
    1/8 tsp. salt
    1/2 lb. dates (stoned & chopped)
    1/2 cup glazed cherries
    1 cup walnuts
    1-3/4 cups corn flakes
    1/2 cup white sugar
    Beat egg whites until stiff, add vanilla and salt.
    Combine the rest of ingredients and add to egg white mixture.
    Drop from a spoon on to greased baking sheet.
    Bake in a slow oven (325 deg. F.) for 15 minutes, or until
    lightly browned. As with anything with egg whites,
    just watch for over browning.

    MINI PEANUT BUTTER CHEESECAKES
    1-1/2 c.Graham cracker crumbs
    3 T.Sugar
    ¼ c.Butter, melted
    16 oz.Cream cheese
    ½ c.Sugar
    2 T.Flour
    3 Eggs
    ¼ c. Sour cream
    1 t. Vanilla
    ½ c.+Peanut butter
    Chocolate chips
    Place cupcake liners in muffin pans. Combine all ingredients
    for crust and press into bottoms of each liner; top w/1 T.
    peanut butter and several chocolate chips on top. Cream cheese,
    sugar, flour; add eggs, sour cream, vanilla till smooth. Spoon
    cheese mixture on top and bake @ 350° for 15-20 min.;
    cool/refrigerate till serving.
    ***************************
    Peanut Butter Nuggets
    Makes 2 dozen
    2/3 C. crushed corn flakes
    1/2 C. shredded coconut
    1/2 C. smooth peanut butter
    2 T. honey
    Mix 1/2 cup corn flakes, coconut, peanut butter and honey
    together. Shape into small balls and roll them in the remaining corn flakes.
    These cookies can be put in the fridge to firm up.
    They also freeze well.

    FROG EYE SALAD
    1 1/3 C. RONZONI PASTA # 44 Acini Pepe, uncooked
    2 CANS (11 oz) Mandarin Oranges
    1 CAN (20 oz) Pineapple Chunks, in juice,undrained
    1 3/4 C. Milk
    3 1/2 C.(8 oz) Cool Whip, thawed
    1/4 C. Sugar
    1 PKG. (4 Servings) Instant Vanilla Pudding
    1 CAN (8 oz) Crushed Pineapple, drained
    3 C. Miniature Marshmallows
    1/2 C. Flaked Coconut
    Cook pasta according to pkg directions; drain. Rinse with cold
    water to cool quickly; drain well. Drain juice from pineapple
    chunks, reserve 1/4 cup. In large bowl, add reserved juice,
    milk, sugar and pudding; beat with whisk or electric mixer until
    well blended, about 2 minutes. Add pasta to pudding mixture;
    stir gently.Let stand 10 minutes. Add crushed pineapple and
    chunks, oranges, cool whip, marshmallows and coconut; mix gently
    and thoroughly. Cover, refrigerate until cold. Top with
    remaining cool whip. Serves 12.

    Alabama Country Supper
    Prep Time: 30 minutes (Ready in 50 minutes)
    FILLING
    1 1/2lb.. pork sausage patties
    6cups sliced peeled Golden Delicious or Granny Smith apples
    1/2cup dried cherries
    1cup sugar
    1/4cup butter or margarine
    TOPPING
    1(6-oz.) pkg. Martha White® Buttermilk or Cotton Pickin'
    Cornbread Mix
    1/2cup milk
    2 tablespoons butter or margarine, melted
    1 egg, beaten
    Heat oven to 425 degrees F. In 10-inch cast iron or
    ovenproof skillet, cook sausage patties over medium heat until thoroughly cooked, turning once. Remove from skillet. Drain on paper towels; discard drippings.
    In same skillet, combine apples, cherries, sugar and 1/4
    cup butter, cook over medium heat until apples are tender,
    stirring occasionally. Add cooked sausage to mixture in skillet,tucking patties under apples.
    In medium bowl, combine all topping ingredients; stir
    until smooth. Pour evenly over sausage mixture. 4 .. Bake at 425 degrees F. for 15 to 20 minutes or until golden brown.8 servings

    Hawaiian Sweet Bread (bread Machine)
    3/4 c. pineapple juice
    1 egg
    1/4 c. milk
    4 T. butter
    1 tsp. coconut or vanilla extract
    1/4 tsp. ground ginger
    1/2 tsp. salt
    1/3 c. sugar
    1/2 c. potato flakes
    3 c. bread flour
    1 1/2 tsp. rapid or quick yeast
    Process in bread machine per your machine directions. Check
    dough after all ingredients are incorporated and make any
    necessary adjustments.
    Orange juice may be substituted for a slightly different flavor.Makes a 1 1/2 lb loaf.

    Black and White Parfaits
    Makes 8 to 10 servings
    1 envelope unflavored gelatin
    3 tablespoons cold water
    1/4 cup boiling water
    2 cups heavy whipping cream
    2/3 cup sugar
    3 tablespoons light rum
    Dark Chocolate Mousse (recipe follows)
    4 cups crumbled brownies
    Sweetened whipped cream, shaved chocolate,
    fresh mint (optional)
    In a small bowl, soften gelatin in 3 tablespoons cold water. Let stand 2 minutes. Stir in boiling water until gelatin dissolves; set aside.
    In a medium bowl, beat whipping cream with an electric mixer until slightly thickened. Gradually add sugar, beating until stiff peaks form. Stir in rum and gelatin mixture. Cover, and chill, 2 hours.
    In a parfait glass, pipe or spoon alternating layers of Dark Chocolate Mousse, rum mousse, and crumbled brownies. Garnish with sweetened whipped cream, chocolate shavings, and fresh mint, if desired.

    Wet cake
    1 cup all-purpose flour
    1 ½ cups sugar
    2 teaspoons baking soda
    ¾ teaspoon salt
    2 eggs
    1 15-ounce can sliced pineapple, drained, juice reserved, fruit
    cut in bite-sized pieces
    1 or 2 bananas, thickly sliced
    1 cup pecans
    TOPPING
    1 cup sugar
    ½ stick butter or margarine
    ½ cup evaporated milk
    ½ teaspoon salt
    1 teaspoon vanilla
    Preheat oven to 350 degrees. Sift together flour, sugar and
    baking powder into a mixing bowl.
    In a cup, beat eggs well. Add ¾ cup of pineapple juice. Add to
    dry ingredients; stir well. Pour into greased 9- by 13-inch
    baking pan.
    Place pineapple evenly over top of cake. Place bananas between
    pineapple, cover with pecans. Using a spatula, press fruit and nuts down into batter.
    Bake 40 minutes to 1 hour, until center is no longer wet.
    While cake is baking, on stove top, boil all the topping
    ingredients for 10 minutes, stirring as needed. When cake comes out of oven, take a wooden spoon handle and poke holes all around edges and over entire surface of cake. Pour topping evenly over cake.

    CREAM CHEESE POUND CAKE
    4 sticks butter, room temperature
    8 oz. cream cheese, room temperature
    3 c. sugar
    6 eggs, room temperature
    1 T. vanilla extract
    3 1/4 c. cake flour, sifted
    Cream together the butter, cream cheese and sugar (about 7
    minutes on the highest setting of a stand mixer). Once this mixture is creamed together well, add eggs, one at a time, until well blended. Add vanilla and gradually add the flour.Pour batter into a bundt pan and bake at 300 degrees for 1 1/2 hours. If you like, you can add 1 cup of crushed nuts to the batter, this usually adds a little more time to the baking.

    CROCK POT NO PEEK BEEF
    2 lbs. beef stew in 1 inch pieces
    1 pkg. dry onion soup mix
    1/2 C. dry red wine or beef broth
    1 can of cream of mushroom soup
    1/2 lb. sliced mushrooms
    Combine all ingredients in the crockpot. Stir well to mix. Cover and cook on low for 8 - 10 hours. Serve over noodles or rice.

    BREAD PUDDING ( What Granmaw called biscuit pudding. Back then if you got light bread you sure didn't let it get stale.
    2 packed C crumbled up biscuits (you can use regular bread but French is better)
    ½ C white sugar
    2 C cream (the thicker the better)
    2 T real butter
    4 whole eggs
    ¼ t cinnamon
    ½ t vanilla extract
    1 C dry raisins
    ½ C chopped pecans
    Melt your butter just enough to pour.
    Break up the eggs
    Mix every thing together and pour into your baking dish then Bake at 350% for 35 or 40 min.(note a little rum flavor won't hurt a bit)

    Cherry Sheet Cake recipe
    1 small box cherry gelatin
    1 (18.25 ounce) box cherry cake mix
    1 envelope Dream Whip
    1 small box vanilla instant pudding
    1 1/2 cup cold milk
    1 teaspoon vanilla extract
    Dissolve gelatin in 3/4 cup boiling water; set aside. Prepare.

    cake mix using package directions. Bake in 13 x 9-inch baking
    dish. Cool for 20 to 25 minutes.
    Pierce cake with fork at 1/2-inch intervals. Pour gelatin over cake. Place in refrigerator. Combine remaining ingredients in deep chilled bowl. Whip until stiff. Spread over cake.Refrigerate for several hours.
