What you probably heard about the canned food was this: if you open a canned food product and place it in the refrigerator in the same can it came from, there is a possibility of contamination from the can itself. Whenever you open something in a can, you should always put the food (this especially includes liquids) into another container for storage. The anatomy of aluminum plus foods (and they contain certain preservatives and have enzymes) that do not mix well - especially under certain temperatures. It's just chemistry.
As far as being afraid of food poisoning...you're not nuts. Anyone who has food issues I'm relatively sure at some point in time worry about that. I still check my silverware at the finest dining establishments but I have to admit...I rather enjoy someone else cooking and preparing a meal for me rather than me doing it all the time (even as much as I enjoy cooking myself)!
Relax...this could just be another OCD with you, too. Try affirmations before approaching foods that are upsetting to you right now (i.e. deli meat) and if need be, make sure you're very careful about where it comes from (I will shop at 3 different stores for different items...drives my husband crazy but at least I know which store has the best and freshest deli, produce, meats, etc) It makes me feel better!
Stay strong...
