>I have been married for 12 years and my husband refuses to eat low fat. He is in great shape and exercises, so I make healthy choices when food shopping, turkey, salad and stock the house with fresh fruit, but dinner is tough. If I make pasta, I put some to the side with a lighter dressing. Pasta salad is easy. All fresh veggies, broc, carrots, onion, celery and fat free Italian dressing with any kind of pasta. You can measure yours out and you get a lot. You can try any recipe with lowfat or fat free cheese and see if he likes it.
My children and I love seafood, even the imitation crab, so I put that in omletets. You just can't go crazy with shrimp because of cholestrol. Let me know how you do. Maybe you'll have suggestions for me. Good luck and congrats on doing so well. I think most of us will struggle with the "skinny thing" for a really long time. I tell my daughter it is more important to be healthy than skinny. And it really is true!
