Now that I know your route, here's my recommendation.

In Jackson, go to Amerigo's. It's a very good Italian place on County Line Rd. Also in Jackson is Julip's, a very good spot to go in at night to get some redfish and a stiff drink. In Monroe I would recommend Waterfront Grill which has parmesean catfish that is very good and has been written about in Southern Living. Also in Monroe is the Mohawk Tavern. Go to the one on Louisville. Great cold beer and stuffed shrimp. In Ruston is the Cajun Cafe on the Old Famerville Hwy. Shreveport has some fine eateries too.

I once ate some good cod up at Turk Lake in central Michigan. Not sure if that's out of the way or not but worth noting.
