Not necessarily. DNA analysis COULD be used to determine what people ate if there are bits of burnt bone in old village fire locations, or some such. So there are ways. However, taking the DNA of a human skeleton isn't going to provide any information on what people ate. In other words, you have to do a DNA analysis on pieces of the food itself (animal pieces or plant pieces) if you want to determine exactly what the food is. You can not do a DNA analysis on what ate the food to find out what food was eaten, I assume that's what you mean.
