First to clarify:

1. the pickle's mod is the VGA mod, not the earlier hi-resolution one;

2. Enablers are quite irrelevant to 7.5.5.

3. Trying to install from a PowerPC install CD is, IMHO, masochistic when the 7.5.3 and 7.5.5 installs which are not PPC-specific are available from Apple's ftp site.

4. Using System Picker also tends to make diagnosis more complex.

My recommendation would be to get a download of 7.5.3 from the Apple site, and put a clean install of that on a HD. If that fails, then you do have hardware problems. If that's OK, then you could re-instate the multi-System set-up.

A first test would be to get a floppy made from the 7.5NAD image and see if your machine will boot from that.
