Well, the results are in. I fixed up the Takky to run an internal HD (it was actually faster than finding a second SCSI cable to hook up two external devices and I needed to do it anyway) and got a base install of 8.1 on there. Same results as with 7.5.3, which is to say that it didn't work. I'm thinking this may be another one of those "YMMV" (or, rather, your analogue board's components may not quite be up to the task of 800x600) things. I've got two more CCs here, however, neither of which has the VGA mod yet (one is High-Res and one is virgin), so I'll be sure to report any success or failure there.

At least we know at this point that the OS doesn't appear to matter at all.
