Yellowing is caused by a number of factors, the most common of which are ultraviolet light and cigarette smoke. Cigarette smoke causes deposits of nicotine on the case, which is yellow in colour anyway. It also reacts chemically with the case, causing a yellow discolouration.

UV light chemically alters the plastic to cause yellow discolouration as well (although I'm reasonably sure the process is slightly different from that of the cigarette smoke).
