In addition to the age difference and boss/rookie problems inherent in a Sara/Gris relationship, I also think the very thing that you think should bring them together -- the fact that they are both highly intellectual loners -- is a good reason for them *NOT* to get romantically involved. They are simply too similiar in their personalities. Catherine, who is much more outgoing (as well as closer to Gris in age) would "balance him out" more.
There was one ep last season that really focused on the differnent relationships Gris has with both of the women in his life. Gris was obsessively investigating something and Sara was egging him on to *be* obsessive about it; then Sara left and Catherine showed up and said, "Gris, have you eaten anything all day?" and, when she found out he hadn't, got him to eat. (It was a little unclear as to exactly where the food came from; whether she actually cooked for him or ordered out or what.) Then she and Gris sat together and calmly talked about the case and other things, while drinking wine. In other words, Sara gave him what he *wanted* -- encouragement to focus solely on his job -- while Catherine gave him what he *needed* a chance to unwind a bit. IMHO, Gris and Catherine function like a long-time, middle-aged, married couple, while Sara plays the role of a "girlfriend". . .although I don't really think he's sexually involved with either woman.
In the interest of full disclosure, I must say. . .my husband and I about the same ages as Gris and Catherine. . .maybe *that's* why I don't like the idea of men pushing 50 being attracted more to women in their early to mid-30s than women in their early to mid-40s. Perhaps if I were in my mid-30s, I'd be more of a Gris/Sara shipper, but I don't know. . .I've never been a fan of May/December romances.
