Actually, Obi-Wan was killed off at the request of Alec Guinness, since he "couldn't stand repeating those awful banal lines" (his quote). He didn't tell Lucas that this was his reasoning, of course, but persuaded Lucas that the story would benefit from his death, and this meant he could also minimise his involvement Eps. 4-6.

Another change we found out about later was that Jabba the Hutt was to appear in the first film, but as a human. Lucas cut the scene (since he didn't now if he could finish off that subplot, for the reasons outlined above). Later on when Jabba became an alien in RoTJ, Lucas decided to reinsert the cut scene into Ep4 SE, and had to digitally insert the alien Jabba into the scene, over the top of the human actor.
