1. The reason why the legs made a major shift in the animation is simple -- transforming mecha parts can morph in animation. Not so in real life, since the toy must adhere to rules of physics etc. Hence Yamato have overcome this with the detachable leg thingie, which although gives a more showlike looking battroid and valkyrie modes, it has a less accurate transformation sequence. The legs don't actually detach and reattach in the anime, they simply morph into place.

2. Using detachment as a significant part of any transformation scheme detracts from the fun. It is a cheap and unimaginative way to overcome the "obstacle" of making a toy change from one form into another. Any fool can make a robot mode by ripping a vehicle apart and reassembling it -- I'd wager that most kids would be able to use the parts from a Lego car and reassemble it into a robot. However, making a car change into a robot without disassembly is where the real creative engineering talent comes in. I've never thought of Omega Supreme's transformation as being terribly impressive, and as already mentioned on this thread, Godbomber and God Magnus are essentially walking accessory packs for Super Jinrai and Fire Convoy -- and even there, Transfans have often bitched about the lameness of their transformations. So comparing the Valkyrie with Transformers like God Magnus isn't really going to support any argument in favour of the Valkyrie's transformation scheme, since toys like that are generally considered by Transfans as already having a rather weak transformation scheme, but are more easily forgiven by fans because it was done by necessity since they are just a walking frame of armour/weapons for other robots.
