Hi Dan.

Could be any number of reasons but if it has only started doing it now the colder weather has arrived, but improves on warmer days, and if you still have the original VW single carb, then I'd suspect carb icing. When it cuts out, pull over immediately and inspect the carb and manifold down pipe beneath it. If they're covered in frost or condensation, then carb icing is your problem. Drop me an email to the New Lancs club email address and I'll talk you through it.

Could also be blocked jets in the carb (clean and blast the carb out with lots of compressed air), clogged fuel filter, fuel tank not vented properly, or any of the engine settings (esp ignition timing).

Give the engine a full service, and set valve clearances, spark plug gaps, points gap, ignition timing and then carb in that order. The Haynes manual covers those adjustments.
