Why don't we just use force rest?
If we want to rest, we tell the DM "D00D WE WANT TO REST" just like in a PnP game. The DM then force rests us, makes time go fast-forward and voila, a new sun rises!

I am doing this somewhat in my own campaign (though I do use designated rest areas), but I imagine such a system can be very improved (by adding a fade out-fade in script, for one, to simulate the passing of time).

Other than that, just don't allow resting at all?

So basically if we needed to rest, we'd find a tavern, inn or set up camp somewhere and actually rest. Hell, you could even incorporate it into the campaign and have us set up watch or something (attack on the camp during the night, OH NOS) and it'd allow for other interesting oppurtunities (maybe my char sneaks over to slit your char's throat (with chance of detection through skill checks)).

This way you allow for a lot of freedom, and still limit our resting chances. On top of that, it would actually create a new aspect of realism by actually using resting and nights.
