In the USA D-VHS VCRs manufactured by Hitachi can record Dolby Digital 5.1 audio from DirecTV and JVC manufactured a D-VHS VCR to record DishNetwork Dolby Digital. All have been discontinued and now hard disk video recorders such as TiVo, Ultimate TV, and DishPlayer record Dolby Digital. I am sure it is technically possible but I don't know if any Sky receivers will have the required digital bitstream out to allow digital D-VHS recording.

D-VHS VCRs can include an MPEG2 encoder/decoder but it is not necessary to record the digital bitstream from a satellite receiver. The satellite receiver can act as the decoder with the D-VHS VCR just a data recorder.
