As for the Flood being caused by an Ice Age...

A. Ice sucks up water, it does not create it. The temporary seas you mention would have been pretty near uninhabitable since they would be surrounded by ice - much like living along the Arctic Circle.

B. Assuming you meant that the melting Ice caused the flood, the Ice would melt slowly, unless the Earth heated up drastically and caused massive runoffs. This means that no one would have noticed the water level rising - it would have been gradual over years since the ice sheets receded over the course of decades (or longer, depending on who you are reading).

As a recent example, the water level of the oceans has supposedly risen an ince over the last 20 years or so. Did you notice? Did anyone but NASA notice?
