Hi Lisa:

You can be firm without being harsh and believe me we all will have those days.
Do not try to convince him of anything lest you look guilty. Remember you are the sitter he chose to enturst his pet and home too so there is not likely going to be lack of trust. If there were I would glady give up the assignment.

Many times clients will respect you more for being so direct so go for it when you must and be confident that you are doing the right thing.
I enocurage you to think positive here and you will be surprised at that response. :)
