With our beginners we usually pick a certain position (i.e. closed guard, cross side, mount, etc.) and focus on that one position for an entire week. And from there we focus mostly on position and escapes. I guess you can say we try and utilize a lot of positional training drills. For example mount, the goal for the guy on top is to just hold that position and for the bottom guy escape. We also use the king of the hill drill like the guard passing version. As for subs we incorporate the more basic ones (armbar, rnc, triangle, etc.) once the begninners seem to have an understanding of the position. Just my 2cents.
