Potato Ring

Metric Ingredient Imperial

1 kg potatoes, peeled and quartered 2 lb
- seasoned salt & pepper to taste -
- vegetable oil or spray for mold -
250 ml coarsely grated cheddar cheese 1 cup
30 ml softened butter 2 Tbsp

Directions
Boil potatoes in a saucepan of salted walter until tender. Drain and mash potatoes until light and fluffy. Do not add milk or butter while mashing. Season with salt and pepper. Allow potatoes to cool. Preheat oven to 400 F / 200 C. Generously oil a medium sized ring mold. Fold cheese into mashed potatoes to produce a marble effect. Turn mixture into mold and brush with 1 Tbsp (15 ml) butter. Bake for 25 minutes or until golden. Loosen potatoes around edges of mold with the point of a knife and invert onto an ovenproof serving platter. Increase heat to broil. Brush potatoes with remaining 1 Tbsp (15 ml) of butter. Broil in oven until top is crisp and brown.
Fill with cooked vegetables such as sliced carrots or peas. Serve immediately. Serves 8
