Subject: Batter for Fried Chicken

Batter for Fried Chicken

1 egg beaten
1/4 cup whole milk
3/4 cup chicken broth (Swanson's has the autolyzed yeast that's needed for flavor)
1 1/2 teaspoon salt
1/2 fresh ground pepper
1 cup self rising flour

Mix the self rising flour in last, let sit for 5 min.

Dip chicken pieces in dry flour and then in batter. Let the batter drip off and then put in hot 350º shortening. Shortening such as Crisco gives the best flavor to fried chicken.
