Subject: Santa's Gingerbread Caramel Sauce

1 cup sugar
2 tablespoons water
2 tablespoons light corn syrup
1Ž2 cup whipping cream
1Ž4 cup (1/2 stick) unsalted butter
1Ž2 teaspoon vanilla extract
Cinnamon to taste(optional)

Stir the sugar,water and corn syrup in heavy medium saucepan over
low heat until sugar dissolves.Increase heat;boil without stirring
until syrup turns deep amber,brushing down sides of pan with a
heat-resistant rubber spatula and swirling pan occasionally,about 8
minutes.Remove from heat.
Whisk in cream,butter and vanilla(mixture will bubble). Place pan
over low heat and stir until sauce thickens slightly,about 2
minutes.Add a dash of cinnamon if desired.Yield:Makes about 1 1/2
cups.
