Subject: FRESH APPLE CAKE

Yields a 1 pound cake

2 cups sugar
1/2 cup vegetable oil
3 eggs
3 cups all-purpose flour 1 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoons vanilla extract
3 cups peeled and diced firm apples,such as Granny Smiths
3/4 cup flaked coconut
1 cup pecan pieces

Oil and lightly flour a 9-inch pound cake pan or tube pan. Preheat the
oven to 325 degrees.In a large bowl mix together the sugar and oil.
Add the eggs and beat well.Combine the flour,salt and baking soda and
add to the oil mixture.Stir in the vanilla,apples,coconut and nuts.
Spoon the mixture into the prepared pan.Bake for 80 to 90 minutes.
Cool and serve.
