Subject: APPLE HAM BAKE

3 medium tart apples,peeled and sliced
2 medium sweet potatoes,peeled and thinly sliced
3 cups cubed fully cooked ham
3 tablespoons brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon curry powder
2 tablespoons cornstarch
1/3 cup apple juice
1 cup pancake mix
1 cup milk
2 tablespoons butter or margarine,melted
1/2 teaspoon ground mustard

In a large skillet,combine the apples,sweet potatoes,ham, brown
sugar,salt,pepper and curry.Cook over medium heat until apples are
crisp-tender;drain.Combine cornstarch and apple juice until smooth;
stir into apple mixture.Bring to a boil;cook and stir for 1 to 2
minutes or until mixture is thickened.

Transfer to a greased 2-quart baking dish.Cover and bake at 375
degrees for 10 minutes or until sweet potatoes are tender.

Meanwhile,in a bowl,whisk together pancake mix,milk, butter and
mustard;pour over ham mixture.Bake,uncovered,for 25 to 30 minutes
or until puffed and golden brown.
