Subject: Smoked Pork Hock Baked in Bread

1/2 onion
1/2 carrot
1 large smoked pork hock(2 pounds/950 g)
1 bay leaf
1 teaspoon(5 mL)crushed pepper
1 package frozen bread dough

Serves 6 as appetizer

1.Cut onion and carrot into 3 or 4 piecess;place in pot with pork h=
ock,
bay leaf and pepper;add water to just cover,then bring to boil and =
simmer
gently until centre bone is loose,about 45 minutes.Remove hock from=
water
and cool.

2.When hock is cool enough the handle,remove skin and bones,leavin=
g the
meat intact in pieces as large as possible.Roll out bread dough to 1=
/4-inch
(5-mm)thickness;place meat in the centre and fold dough around to c=
over.

3.Bake in preheated oven at 300=B0F(150=B0C) for 45 minutes or unti=
l golden
brown.Slice with a sharp knife and serve with mustard or horseradish=
.
