Subject: Welsh Rarebit

1/2 pound(225 g)old cheddar
6 slices whole wheat bread
2 tablespoons(25 mL)butter
1 tablespoon(15 mL)each,Worcestershire sauce,Dijon mustard, flour
1/4 cup(50 mL)or more dark ale
Cayenne pepper,to taste

1.Grate cheese.Toast bread on both sides.Mix together butter,
Worcestershire sauce,mustard,flour and ale in a small saucepan;sim=
mer on
low heat while stirring until the mixture is smooth and thick.Remove=
from
heat and add cheese and stir just until melted--do not cook,or mix=
ture
will turn stringy.

2.Spread mixture on toast,dust with cayenne;place under oven broil=
er for
a few minutes or until the top begins to brown.

Note:The mix should be thick enough to stay on top of the toast unti=
l
grilled.You may replace the flour with two egg-yolks for thickening.
