Subject: Chocolate Mousse

21 ounces chocolate
8 ounces butter=1 cup=2 sticks
12 egg yolks
12 egg whites
3/4 cup sugar
12 ounces heavy cream

Place chocolate and butter in a mixing bowl.Place over a bot of
boiling water.Melt chocolate and butter,whisking occasionally.Separate the
12 eggs into yolks and whites.Once chocolate is melted, remove from
heat and mix in egg yolks.In a mixer,begin whipping egg whites and
sugar until a medium peak is formed.In another bowl,whip cream until soft
peaks are formed.Gently fold the melted chocolate into the whipped egg
whites.Fold your whipped cream into that mixture.
