so here are a couple of recipes in case anyone is interested:

Tomato Sauce - I made my own because the bottled kind is loaded with sugar and salt. I added no sugar to this recipe and very little salt for taste. (For all of the tomato products, make sure you get the kind with "no added salt" so that you can control the amount yourself)

1 medium vidalia onion, diced
1/2 cup baby carrots, diced
2 stalks of celery, finely chopped
2 cloves elephant garlic (it's sweeter and milder)
1 can tomato paste
2 cans diced tomatos
2 cans crushed tomatos
3 cups veggie broth or stock
1 bell pepper, any color, diced
optional: sundried tomatoes, thinly sliced (I happened to have these on hand so I threw them in but they are totally optional)
dried basil, oregano, parsley and salt to your taste

I coated the bottom of a large pot in nonstick spray, you could use a little olive oil if you wanted. then i let the onions, celery, carrots, and garlic get soft and caramelize (this adds sweetness to the sauce without adding and sugar or honey. I used the vidalia onion and elephant garlic because they are sweeter.) After they got some color, I added about one cup of the veggie broth to deglaze the pot. Then I whisked in the tomato paste. After the stock and paste were combined, I added the rest of the stock, the other tomato products, the pepper and sundried tomato, and the herbs and a tiny bit of salt. (the stock adds a lot of flavor though). Then I let it simmer for about 30 minutes. It was wonderful and thick and rich. If you're doing Weight Watchers POINTS, I'm pretty sure this sauce is FREE. If you don't like a chunky sauce, you could skip the pepper, omit the diced tomatos and double up on the crushed, and puree the onion/carrot/celery mixture before adding the tomato products.

I've already lost 4lbs! Woohooo. Hopefully some people will be around sooooonn...

Next time I'll post energy bar recipe and chickpea salad...
