I have also been to a church which used bread in a communion service. and they had grape juice in little itty bitty cups. Now, I know Jesus drank wine and had unleavened bread but imagine little kids drinking wine? I think this is all symbolism and remembrance . Jesus wanted us to do these things in remembrance of him and have communions. Also, in the Roman Catholic Church the priest gives you a little round wafer and they actually believe that the wafer IS the Body of Christ and if you dont put it in your mouth --the priest, or the laity will get up in your face and tell you to put it in your mouth immediately!
Usually non-Catholics are not allowed to take communion but it was different because I was at a funeral mass for my brother who died the other week. I did it out of respect and also for symbolism of Jesus.

I dont think it is a sin if you don't use unleavened bread at communion in remembrance of Jesus. I think it is the communion itself and prayer that counts
