Why are you avoiding fat, Ivy? Your brain and immune system can't survive without fats, especially those found in grass fed meat and wild oily fish, like salmon. You can live a long healthy life without any carbs, but you'd be dead without fat or protein. Lipids researchers say that a diet of 30% fat isn't adequate in terms of essential fatty acids for brain and immune function.

How were you tested for diabetes? I ask because a very large study found that the fasting test misses diagnosing 70% of female diabetics til their disease is very advanced. I've been DM for many years, but have never had a diabetic range fbg test result, even now. When someone has slow gastric emptying, she should be tested at one and two hours after meals, to see if she's one of the 70%.
