Hey Peter, nice to hear from you, No, I do that cater on Sept 14, the same day I have two other jobs, one for AIC funds and one for my bro in laws sports teams.

The Navy Club was one that I had to do my best to DO SOMETHING for and he jumped at the butts.....

What I plan on doing is what I did at the pigroast I did on Saturday and that is to have the butts ready and wrapped in foil and allowed to sit in a cooler with an aluminum pan in the bottom of the cooler.

In two hours there is enough au jus sittin in that aluminum pan to drown half of them drunken seamen...LOL

I tryed it on the weekend and it was incredible, far nicer than the pig itself,.....for my money its in the butts....

Anyways, I suggest trying it, I think you will find it far better than chicken stock or applejuice or any of those other regular methods, I mean, the juice is already there, you just have to capture it...
I`m going to cook and carve, put into aluminum pans and pop them in the fridge at the Navy Club, he is going to just heat and stir them in their ovens, I`ll probably give him the au jus in a separate contaner for him to heat up and pour over the pork....
