Peter we make a mix of equal amounts of goose breast and pork shoulder . its a nice sausage patty for grilling but you have to be carefull not to overcook . 5 lbs meat - 5 teaspoons of canning salt - 2 1/2 teaspoons of cracked black pepper - 1 1/2 teaspoons of ground fennel - 2 teaspoons whole fennel - 2 1/2 teaspoons garlic powder . also add 1 cup of cold water , it makes it easier to mix all the above . if you want to make it hotter add 7 tablespoons of hot sauce to the mix . if you want to put it in skins add 20 % more fat . reg
