Buddy, you have asked a good question and the answer is not an easy one. Have you checked the links on this site? BBQsearch will lead you to some good recipies; so will barbecuen on the internet. The Klose forum has some good tips and friendly people who eat, sleep and breathe brisket. For a cajun site, try gumbopages.com. virtualweberbullet.com has excellent advice as well.
As far as storage is concerned, I think the best way is to vacuum pack the cooked meat and freeze. You may be able to find a local meat market that can help with the bagging and would also be happy to work with you on selecting and trimming the brisket for smoking.
