morning Johnny , i continue to cook all year no matter what the temp is . even with old Sputnik i'd just crank it up and get the best i could then finish in the oven . any Q is better than no Q in my books . on the WSM saturday was the first time using briquets and wanted to see how long it would go on a full load . at 5:45 am it was up to temp at 240 degrees and the brisket was done at 2:15 pm . at 7:30 pm it was still going at around 245 degrees . the outside temp was around 6 or 7 i believe and windy . although i'm not directly in the wind thats a real good burn in my opinion . i may be rethinking my lump only stance . reg
