Hi Reg,

Glad to hear that your brisket turned out fine. I did one today and found it hard to keep the temps up. It seemed like I used a heck of a lot of charcoal for about 7 hrs, so after wrapping in foil, I put it in the oven for 2.5 hours @ 225 degrees, for its final stage. (I used a 50/50 mix of apple and oak by the way)

I just took it out of the foil 10 min. ago, and am about to slice and mix with homemade bbq sauce for sandwiches.

Even though the temps hovered to about 5 degrees today, the smell of the smoke and the ever present beer made me smile about a wonderful summer. I guess it's time to put the offset to rest for the winter, but as long as there is still power to the garage, and wood chunks in the bin, the Meco electric will have to get me through to spring !
