Warm Lamb Salad with Crispy Potato Skins

Ingredients

1 lamb steak
1 tomato
1 tbsp olive oil
handful of fresh mixed soft herbs, e.g. basil, coriander or chervil
1 sweet potato, skin only

Method

1. Heat deep fat fryer to 190C/375F or fill a large saucepan one third with vegetable oil. To test if oil is to the correct temperature, drop a small cube of bread in the oil, if it sizzles and turns golden the oil is ready to use. (CAUTION: hot oil is very dangerous. Do not leave unattended.)
2. Cut the tomato into wedges and place on a plate.
3. Clean and dry the herbs and place on the plate.
4. Heat a pan with the olive oil and pan fry the lamb steak for 3 to 4 minutes on each side.
5. Deep-fry the sweet potato skins until golden and serve with the lamb and salad.
