Subject: I just love Christmas time!! I am just about done with my shopping. I have a few gift certificates to pick up and then I will be finished. As for holiday plans we are planning on staying home and cooking a big meal and having some friends and family over :) Christmas Eve we are having dinner with another family. It should be fun!! I have done lots of cookie baking too... I gave a couple of cookie trays as gifts. I love to bake cookies but I gotta say I have had my fill for atleast a little while. They turned out great though so I am happy :) I will put a couple of the cookie recipes inside if anyone is interested :)

The recipes below I got from friends. They are both very tasty :)

Red Velvet Cookies

1 package red velvet cake mix
1 8oz package cool whip (thawed)
1 large egg
1/2 lb confectioner’s sugar.

Mix together first 3 ingredients. Using a spoon...drop balls of dough into confectioners sugar and roll. Bake at 350 for approx 10-12 minutes.

They look very festive and are tasty. You can substitute most any cake mix for the red velvet. Try lemon cake mix or even chocolate!

*I used a Lemon cake mix and the cookies came out SO yummy!!

Pecan Snowballs

2 Cups Butter, Softened
4 Tsp Vanilla
1 Cup Sugar
1 Tsp Salt
4 Cups Sifted Flour
3 to 4 Cups Finely chopped Pecans or Walnuts
1 Cup Sifted Powdered Sugar


Cream Butter, Vanilla and Sugar until fluffy. Sift together and add Flour and Salt. Mix well. Mix in Nuts. Shape into 1 inch balls, place on ungreased cookie sheet. Bake and cool before rolling in Powdered Sugar. Bake at 325 for 20 minutes.

[> I will be staying put for Christmas as well. My dad will be flying in from Los Angeles for the holidays (he'll be here Wednesday - yay)! Christmas Eve I will be going to the church fellowship hall for my mom's side of the family's get together (there are about 50 of us - just immediate family). The family got so big that we had to move it from my granny's house last year. haha Then Christmas Day I'll go to my uncle's house to spend time with my dad and open our gifts and then will go to my mom's house for our get together.
