Subject: Jingle Bells and all that good stuff...


Hope you're all enjoying the holiday season so far. Who's actually finished shopping? Not me!

What are your plans? Who's traveling? We're staying put this year, and hosting a small gathering. Any yummy recipes to share?

As for holiday plans we are planning on staying home and cooking a big meal and having some friends and family over :) Christmas Eve we are having dinner with another family. It should be fun!! The recipes below I got from friends. They are both very tasty :)

Red Velvet Cookies

1 package red velvet cake mix
1 8oz package cool whip (thawed)
1 large egg
1/2 lb confectioner’s sugar.

Mix together first 3 ingredients. Using a spoon...drop balls of dough into confectioners sugar and roll. Bake at 350 for approx 10-12 minutes.

They look very festive and are tasty. You can substitute most any cake mix for the red velvet. Try lemon cake mix or even chocolate!

*I used a Lemon cake mix and the cookies came out SO yummy!!

Pecan Snowballs

2 Cups Butter, Softened
4 Tsp Vanilla
1 Cup Sugar
1 Tsp Salt
4 Cups Sifted Flour
3 to 4 Cups Finely chopped Pecans or Walnuts
1 Cup Sifted Powdered Sugar


Cream Butter, Vanilla and Sugar until fluffy. Sift together and add Flour and Salt. Mix well. Mix in Nuts. Shape into 1 inch balls, place on ungreased cookie sheet. Bake and cool before rolling in Powdered Sugar. Bake at 325 for 20 minutes.

[> I will be staying put for Christmas as well. My dad will be flying in from Los Angeles for the holidays (he'll be here Wednesday - yay)! Christmas Eve I will be going to the church fellowship hall for my mom's side of the family's get together (there are about 50 of us - just immediate family). The family got so big that we had to move it from my granny's house last year. haha Then Christmas Day I'll go to my uncle's house to spend time with my dad and open our gifts and then will go to my mom's house for our get together. Double-Chocolate Brownie Recipe
� 1 1/2 cups unsifted flour
� 1/2 teaspoon baking soda
� 1/2 teaspoon salt
� 1 cup butter
� 1 1/2 cups sugar
� 4 tablespoons water
� 2 12-oz package (4 cups) semi-sweet chocolate chips, divided in two
� 2 teaspoons vanilla extract
� 4 eggs
� 1 cup chopped nuts (optional)

Preheat oven to 325 degrees. In a medium bowl, combine flour, baking soda, and salt; set aside. In medium saucepan, combine butter, sugar, and water; bring just to a boil. Remove from heat. Add 12-oz chocolate chips and vanilla extract. Stir until chips melt and mixture is smooth. Transfer to large bowl. Add eggs, one at a time, beating well after each addition. Gradually blend in flour mixture. Stir in remaining 12-oz chips and nuts. Spread into greased 13-in by 9-in baking pan. Bake at 325, 45-55 minutes. Cool and serve.

Chocolate cake
Combine:
2 cups of flour
3/4 cup Hershey's cocoa
2 tsp baking soda
1 tsp baking powder
1tsp salt
2 cups granulated sugar

Add: 1/2 cup Crisco Canola Oil
2 eggs
1 cup milk
1 tsp vanilla
1 cup hot coffee

Beat with an electric mixer. Batter will be very runny. Pour into 9x13" greased baking pan. Bake at 350 degrees until done usually 35 to 40 minutes.

Test with knife or finger tip for cake to spring back.

Qualifier: The brownies work best in a convection oven and or/glass pan. I haven't tried the chocolate cake recipe myself yet but my former boss made it and I loved it so I had to ask for the recipe.

Another great thing to do is make fudge and then use the mixture for chocolate sauce over vanilla ice cream, yum. Or if you want a quick brownie varation take a mix and add half a bag of butterscotch morsels to them, bake and serve warm out of the oven with vanilla ice cream. It's very good.

[> I'm staying local. We always do a traditional Polish Christmas Eve with my dad's side of the family(which is really small). That's going to be hard this year because my grandpa passed away. Christmas day is spent with my mom's side of the family. The days following are my brother's and mom's birthdays. A busy busy season! And nope, xmas shopping isn't done yet.
