Subject: I'm almost, but not quite finished shopping. With my last final not over until late Friday afternoon I had a lot going on. Now I can concentrate on other things. I have a goal to finish the draft of my manuscript before, hopefully, going back to school next semester. A visit to a surgeon tomorrow will let me know what my future plans are for the next few months. I may need an operation on my knee for some suspected torn cartilage from a work injury in August. Well see what happens. I'll update y'all on it tomorrow. I've put two chocolate recipes inside. :)

Double-Chocolate Brownie Recipe
� 1 1/2 cups unsifted flour
� 1/2 teaspoon baking soda
� 1/2 teaspoon salt
� 1 cup butter
� 1 1/2 cups sugar
� 4 tablespoons water
� 2 12-oz package (4 cups) semi-sweet chocolate chips, divided in two
� 2 teaspoons vanilla extract
� 4 eggs
� 1 cup chopped nuts (optional)

Preheat oven to 325 degrees. In a medium bowl, combine flour, baking soda, and salt; set aside. In medium saucepan, combine butter, sugar, and water; bring just to a boil. Remove from heat. Add 12-oz chocolate chips and vanilla extract. Stir until chips melt and mixture is smooth. Transfer to large bowl. Add eggs, one at a time, beating well after each addition. Gradually blend in flour mixture. Stir in remaining 12-oz chips and nuts. Spread into greased 13-in by 9-in baking pan. Bake at 325, 45-55 minutes. Cool and serve.

Chocolate cake
Combine:
2 cups of flour
3/4 cup Hershey's cocoa
2 tsp baking soda
1 tsp baking powder
1tsp salt
2 cups granulated sugar

Add: 1/2 cup Crisco Canola Oil
2 eggs
1 cup milk
1 tsp vanilla
1 cup hot coffee

Beat with an electric mixer. Batter will be very runny. Pour into 9x13" greased baking pan. Bake at 350 degrees until done usually 35 to 40 minutes.

Test with knife or finger tip for cake to spring back.

Qualifier: The brownies work best in a convection oven and or/glass pan. I haven't tried the chocolate cake recipe myself yet but my former boss made it and I loved it so I had to ask for the recipe.

Another great thing to do is make fudge and then use the mixture for chocolate sauce over vanilla ice cream, yum. Or if you want a quick brownie varation take a mix and add half a bag of butterscotch morsels to them, bake and serve warm out of the oven with vanilla ice cream. It's very good.

[> I'm staying local. We always do a traditional Polish Christmas Eve with my dad's side of the family(which is really small). That's going to be hard this year because my grandpa passed away. Christmas day is spent with my mom's side of the family. The days following are my brother's and mom's birthdays. A busy busy season! And nope, xmas shopping isn't done yet. I work all the way through Thursday this week...yuck! A coworker brought this amazing buffalo wing dip to our xmas party this year and last year. I'm Spending Christmas With Jesus This Year


I see the countless Christmas trees around the world below.
With tiny lights, like Heaven's stars, reflecting on the snow.
The sight is so spectacular, please wipe away that tear;
For I am spending Christmas with Jesus Christ this year.

I hear the many Christmas songs that people hold so dear.
But the sounds of music can't compare with the Christmas choir up here.
I have no words to tell you the joy their voices bring.
For it is beyond description to hear the angels sing.

I know how much you miss me, I see the pain inside your heart.
But I am not so far away, we really aren't apart.
I cannot tell you of the splendor or the peace inside this place
Can you imagine Christmas with our Savior, face to face?
