Here is the recipe for Eclair Cake for those of you who wanted it. Enjoy!

Topping (Make first so it can cool)
1 Stick butter
1 c. graulated sugar
1/3 c. cocoa
1/4 c. milk
1/2 tsp. vanilla
1/8 tsp. salt
Melt butter, add sugar, cocoa and milk. Bring to boil and cook for 1 minute. REmove from heat and add vanilla and salt. Let cool.

Batter
2 boxes Jello Instant Vanilla Pudding Mix
3 c. milk
8 oz. Cool whip
Mix pudding and milk. Fold in cool whip.

Bottom
1 Box graham crackers

In 9x13 dish, put a layer of graham crackers. Spread half of pudding mix over crackers. Put second layer of crackers and cover with remaining pudding mix. Add last layer of graham crackers and top with chocolate topping. Refrigerate.
