My dh is a potato junkie. We are dieting and what I do, if I make roast etc and he thinks he can't live without gravy or sauce, I use mashed cauliflower in it's place. Sounds strange, but it works in a pinch. I have also cut cauliflower really small and made it like fried rice (with meat, peas, onion mushrooms and soya sauce etc.) Turnip is another great substitute. I cut them up like fries. Sprinkle seasoning salt or brown sugar substitute like splenda.

I solved the sweet problem with SF jello and light topping in the evning or we have sf fudgicles.
