There used to be a place on the coast we liked to go to after a walk on the beach - especially in the wintertime. It served only baked potatoes with all kinds of toppings and salads.
If you like clam chowder, you will probably like this - it was our favorite topping.
Bake some big potatoes, split open, fluff with a fork and top with:
A basic cream sauce. Make a roux of:
2 TBL butter
2 TBL flour
to
1 cup milk
Add a can of chopped clams including the broth.
Season as you like it (we like it peppery). Top the potatoes (it's nice to put them in a shallow dish or bowl so the sauce can puddle up under the potato.) Served with a green sald including oranges and red onions - a beer or a glass of white wine. Mmmmmm, it warms your tummy and is very satisfying.
