They used to put out these books. Really nice ones about the size of notebook paper but bound and set with fancy typeface, etc. They would include drawings, poems and stories. I would get flyers about them in the mail when new ones came out and I would have to order them. The best Start Wars one was called "A Tremor in the Force" and the editor who put them out would come out with a new volume every few months. There were several other Star Wars fanfic books each with its own name. There was also a couple Harrison Ford ones among others. One was based on his Indiana Jones character and called "Field Studies" and another dealt with stories about all his roles in various films called "Choice Parts"! LOL. A bit of a double meaning there. Some PG13/R rated drawings of Harrison usually were included!

The big drawbacks to these were of course a limited amount of stories and plus they got to be rather expensive! You'd buy the latest volumes and then just have that to tide you over until the next ones came out.
And I didn't always like all the stories. I was very partial to the Han/Leia relationship ones. I think I even likd the ones where they were married! ;-) So I ended up paying for some stories that I didn't even want to read. The books were really nice themselves though.
There also were a few SW stories that did crossovers with other TV shows or movies but I wasn't big on those.

It's much better now though with the nearly endless supply of stories on the internet and its all free! I haven't been able to find where Star Wars Stories are online.

Well this was pre- X-Files and I don't know if XF fanfic was every distributed in this manner or if it all just start on the internet. I know XF is often mentioned as being a show that was the first internet TV series so maybe it all started online.
