You must stop beating yourself up, by the sounds of it you are doing a brilliant job. You are vital to help your son remain focussed but I feel, fromthe perspective of a teacher (which I am) you need to go back to the school and work out a more maneable amount of homework or them allowing you to be more creative in the ways your son records his homework, eg using diagrams, story boards, mind maps to show his ideas, recording on the computer if handwriting is an issue. The school should be making provision so the amount of homework set is going to take a similar amount of time as your son;s peers. he will already be tired from having to work hard all day in school, he shouldn't be expected to be spending double thr amount of time on his homework as well.
