Recipe from this month's copy of Delicious, entitled "Auntie Hughag's oatcakes are better than any you'll buy"

60g self raising flour plus extra for desting
1/2 tsp bicarb of soda
25g oatmeal (not the pinmeal type as it is too small)
50g cold, unsalted butter cubed
2tbsp milk
crowdie (or other) cheese & chutney to serve

1. Preheat oven to 180 C
2. Sift flour, bicarb & small pinch of salt into bowl, Mix in the oatmeal then rub the butter into the dry ingrediants. Gradually stir in the mil and 60ml cold water. Form into a ball of dough.
2. Halve the mixture. With floured hands roll each section in turn intoa cylinder measuring about 7.5cm long & 5cm dia. Lay on a floured surface and with a knife slice into 0.5cm thjick rounds. Don't worry if they look a little measly, the oatcakes should look rough and ready. Bake on 2 baking trays, grease-proof paper lined for 25-30 minutes until golden and cooked through. Cool on a wire rack and store in an airtight tin for up to 3 days.
3. Serve with crowdie or any other good cheese and some chutney & enjoy.

The picture in the mag shows them all golden and darker at the edges.
