If you're into liquers, then get a bottle of cheapish whisky, and a large kilner jar or a rumptoft (one of those large pottery jars that are so beloved by the Germans for making fruit liquers where you can drink the juice and eat the fruit). You then need some blackberries (I would suggest at least a pound), rinse them through, put them in a pan making sure the are still slightly wet, add the contents of a jar of honey and heat it all through so the juice is really running. Pour the whole lot into your huge jar and when it has cooled pour your bottle of whisky over it and then put it into a dark place for about 4 months. You then strain off the liquid into clean screw top bottles (the best way is to filter it through a coffee filter paper into a cafetiere so that you dont get the dregs from the fruit in your liquid but I would suggest that you strain it into a pan first so that you don't lose any fruit. The liquid is ready for drinking and the fruit makes a fabulous pud, especially if you like break & butter pudding and use some of the fruit instead of the more conventional raisins, and you can mix it with cream and make that rather nice Scottish pud, crannaich or however you spell it. You could also use the fruit well drained in a cake mix, conventional sponge mix enough for a Victoria spone, but cooked in a deep cake tin as if cooking a fruit cake. Eat it hot with custart or cream or eat it cool just as a cake. If you want any more suggestions let me know.
