Hello Gilly, what a treat, I could not get fennel seeds here, (what a surprise, we call it Cyprus syndrome) so I used some grated onion instead, followed your recipe from there then chilled them after the initial simmering. On unwrapping the sauges there was a bit moisture about so I dried them on kitchen towel, fried as normal, OK they do look a bit knobbly not having a skin but the taste is delicious and is wide open to add any flavour you want for future dabblings. thanks for making my week.
