here is my stovie recipe remembering there will be loads of variations. I will do the pork pie one this evening. Norrie

Everyone has a different way of making stovies. As a kid we always had them with chopped up sausages my wife’s family made them with minced beef you can also use left over meat or chicken. I obviously think sausages is the boys but the basic recipe remains the same.

4 portions

4oz beef dripping or half and half lard & butter
4 medium onions peeled & sliced
5lb tatties rough chopped
500g Sausages or 500g mince
plenty of seasoning
200ml water

Fry the sausages or brown the mince and set aside.

In a heavy based saucepan melt the dripping until hot.
Stir in the sliced onion then add the tatties.
Stir well until everything is well coated.
Add seasoning
Add the water.
Bring to the boil, cover and simmer for 10 mins.

Add the chopped sausage or browned mince stir through cover and simmer slowly for 30mins.

Auld wife’s tales say that stovies taste best when slightly caught on the bottom of the pan. A fine excuse.
