One thing that always annoyed me was that many RPing games focus on the offensive abilities of your characters only i.e. how much damage can they do - what's their worth in a fight. But I think when a party travels in the wild there are other skills that can affect survival. Things as hunting skills, trapping animals, preparing food, etc. can add much to a character's importance to the group, beside the fighting skills this character has.
And while those skills don't directly affect the story, I think they can do a great job in adding realism and making the game experience look more real. I see those skills just as little details that help to flesh out the background of the story and bring it alive.

I don't think you should go crazy with them, but a few specialist skills would be nice. And I'm also not for adding skills for the sake of it. All those specialist skills should have a clear purpose and should be useful for the party.

e.g.
trapping and firemaking for rangers, weapon repair for armsmen (they should know how to sharpen their blade), cooking skills (halflings should get a bonus ;))
